Recipe: Raspberry Brownies

Alright, long time no see~! Here's a recipe I have. Now, I had a picture of my results, but I lost it in the computer.

Raspberry Brownies

Ingredients:

  • 1 cup(16 tablespoons or 2 sticks) unsalted butter, cut into pieces.
  • 4 oz. semisweet chocolate, chopped.
  • 2 cups sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/4 tsp. salt
  • 1 cup chocolate chips
  • 1/2 seedless raspberry jam
Directions


  1. Preheat oven to 350 F. Line a 9-by-13 inch baking dish with foil, leaving an overhang on each short side. Spray with cooking oil.
  2. In a large pan over low heat, melt butter and semisweet chocolate, stirring often. Transfer to a bowl and let it cool for 10 minutes. Whisk in the sugar, eggs  and vanilla, then stir in flour and salt until just combined. Fold in chocolate chips. Pour batter into the baking dish. 
  3. Spoon jam into a small bowl and stir vigorously to loosen. Drizzle jam evenly over batter and swirl in lightly with a spoon. Bake for 40 minutes, or until the top has set and a toothpick inserted in the center comes out clean. Let cool in pan on a wire rack.
When completely cooled, run a knife around edges without foil. Using the overhang of foil, lift brownies out of pan, place on a cutting board and peel of the foil. Cut into squares and store in an airtight container at room temperature.
